This full-time course covers all the basics and runs for up to three years (including six weeks of holistic placement). By the end of our SIT30821 Certificate III in Commercial Cookery, you will know how to:

  • Make various familiar dishes: We’ll teach you cookery basics, how to use kitchen tools and equipment, and how to make popular salads, appetisers, fruit, vegetable, grain, egg, poultry, seafood and meat dishes and sauces, stocks and soups. You’ll also know how to make basic bread, pastries, desserts, cakes and prepare and present sandwiches.

  • Work effectively as a cook and in a team: Our course will cover how to prepare food to a high standard safely and quickly, work well with others, keep your ingredients fresh, keep your work area, equipment and tools clean and maintain hygiene standards, and how to plan and budget for basic menus.

  • Work flexibly and sustainably: You will leave our cookery course in Adelaide knowing how to work in eco-friendly ways and methods to accommodate allergies or special diet, religious or cultural needs such as sugar or gluten-free, vegetarian, vegan, kosher or halaal.

  • How to be a manager: As well as your basic cookery subjects, you can choose to learn how to manage a team to get you ready for overseeing a kitchen. For example, these units would include managing diversity and conflict and administering eco-friendly practices.

To complete the course successfully, we’ll need you to pass 25 units in total, including 20 compulsory and five elective units.
